How the dry and the wet differ
Through the dry the town fills up and so do we: six nights, full board, verandah open from two on Saturday.
Through the wet we pull the hours in. Doors go later, Sunday often closes altogether, and the storeroom becomes the coolest place in town.
Whatever the season, the board out front and whoever answers the phone are the only two sources worth trusting.
Dry season
May to September. Six nights, all tables, longest hours.
Build-up
October to December. Later doors, mango on everything.
Wet season
January to April. Short week, slow tables, cold plates.
